
I was in the mood to make stuffed shells the other day for dinner. I had a bunch of fresh spinach and herbs from our weekly produce delivery that I needed to use. I cooked the spinach down with some sweet onions, garlic and spices. Once cooled I mixed it all into the ricotta cheese. Some fresh grated parmesan cheese and fresh grated nutmeg rounded out the filling. Once stuffed, I made a creamy tomato sauce with some cooked pancetta. Tossed on a generous portion of fresh basil and oregano. It made an excellent quick pantry dinner.
