It's that time of year for yummy breads and desserts made with pumpkin and other spices of the season. I was looking through an old email today and found this recipe from back at my pot luck days at WaMu staff retreats. I had tried a bunch of recipes to get this one exactly to where I like it. I think I'm in the mood to make this, this upcoming weekend. Given our change in eating habits, I'm sure I'll be giving a lot of this away.
Dan’s Pumpkin Bread
1 & ½ C sugar
½ C oil
2 eggs
1 C pumpkin
1 & ¾ C flour
¼ tsp baking powder
1 tsp baking soda
1 tsp salt
½ tsp ground cloves
½ tsp cinnamon
½ tsp nutmeg
½ tsp allspice
1/3 C water
½ to 1 C raisins, dates or dried cranberries
1 C chopped walnuts
Combine all ingredients in a large mixing bowl. Pour into 1 large pan (takes about twice as long to bake) or 4 to 5 small loaf pans. Sprinkle with walnuts. Bake at 325 degrees for 45 minutes or until knife inserted comes out clean.
Small loaf pans are typically 3” by 6-7” long. Raisins and/or nuts are optional if you don’t really like them. Use what you have on hand and mix to taste.
