Dominos & Good Eats

We got together with some friends this weekend for one of our recurring domino's game nights. Our friend Kate themed the pot luck and assigned out dishes. We had a BBQ theme based on the 2008 June issue of Gourmet Magazine. Selections included, pulled pork sandwiches, cole slaw, corn pudding, bean salad, and chocolate hazelnut blondies for dessert with vanilla ice cream. I've had corn pudding before that was very labor intensive to make.



This recipe that Rita brought over was super tasty. As I learned how easy it was to make, I thought, I'm totally making this again for a quick side to grilled meat or chicken going forward.

Quick & Easy Corn Pudding

1 can whole kernel corn, drained
1 can cream corn
½ C butter, divided
1 (8 oz.) pkg. sour cream
1 box Jiffy corn bread mix

Melt 6 tablespoons of butter in mixing bowl. Put in drained kernel corn, creamed corn and sour cream. Mix together well. Add corn bread mix over corn mixture and stir all together. Spread remaining 2 tablespoons butter in a 9 X13 glass baking dish. Pour in corn mixture. Bake 45 minutes at 350 degrees until done, or until a toothpick inserted comes out clean.
