Home Canned Enchilada Sauce


I do love our annual trek to Eastern Washington to pick up fresh produce. Holly and I, along with friends and our kids rented a minivan and drove over to Yakima and surrounding towns to get some farm fresh picked produce. It's always a fun day trip or over-nighter. I picked up a ton of tomatoes, onions and peppers to name a few things. My first canning tackle was some home canned enchilada sauce. Nothing compares to home canned food, and it's easy and very economical. Just takes a little commitment of your personal time. But I thoroughly enjoy it! 
Oven roasted tomatoes and broiled / charred onions, garlic and a medley of peppers await.

 One of my favorite kitchen gadgets in my immersion blender. Makes everything so easy.
 Lots of spices to give this a bite. Mexican oregano, chili powder, cumin, coriander, salt, spicy spanish smoked paprika and fresh citrus juice to name a few.

10 home canned pints of fresh, yummy enchilada sauce will make a nice addition to our pantry. One of my favorite foods to make with this is Enchilada Suizas. Roast chicken, wrapped up with some black or pinto beans, cheese and lots of fresh herbs and spices. Rolled up in tortillas and smothered in a spicy tomato cream sauce.
