I continue to make a dent in 50# of apples I purchased in the fall. Yesterday provided the perfect day to say home and cook, bake and can. The afternoon and early evening provided some random snow flurries. Way to cold to go outside and go for a walk. So, while I butterflied an organic chicken and roasted that off with root vegetables, I made a big vat of cooked apples which yielded several pints of unsweetened applesauce to cook and bake with.

Cooked until soft, then put through my food mill. I continued to reduce it, with some cinnamon sticks and whole nutmeg for subtle flavor.

All ladled into the jars, and ready to process.
